Cucumber curry
VELLARI CURRY
2 large cucumbers
6 red chillies
2 tbsps coconut scrapings
1/2 tsp mustard seeds
1/2 tsp fenugreek seeds
1/2 tsp turmeric powder
a small ball of tamarind
a few curry leaves
4 tbsps coconut oil
salt to taste
Roast fenugreek seeds and red chillies and powder them.
Peal and cut rhe cucumbers in to small pieces.
Extract juice from the tamarind by soaking in a little warm water.
Heat the oil and add mustard seeds, powdered masala and turmeric powder. fry till golden brown.
Add tamarind juice, salt and the cucumber pieces.
Cook till the cucumber is soft.
Add the coconut scrapings and a few curry leaves.
