Plantain Curry
VAZHAKKAI CURRY
3 plantains
3 green chillies
1/2 tsp turmeric powder
1/2 tsp mustard seeds
1/2 tsp cumin seeds
4 onions, sliced
1/2 coconut ,scraped
5 tbsps coconut oil
a little butter milk
a few curry leaves
salt to taste
Peel and cut the Plantains in to cubes. soak them in butter milk to remove their stickiness .
Grine green chillies and turmeric .
Cook the plantains with the ground paste.
Add salt and cook till they are tender, adding a little water.
Grind the grated coconut and cumin seeds to a smooth paste .Add to the cooked plantains and stir well.
Remove from the fire when cooked
Heat the oil and fry sliced onions, mustard seeds and curry leaves. Pour over the vegetable. when well blended , simmer onceand serve hot.
