Coconut Milk Rice Pudding
THENGAPAL PAYASAM
2 coconuts 2 tbsp raisins
200 gms jaggery 2 tbsp cashewnuts
100 gms rice  1 tsp cardamom powder
1 litre milk a pinch of edible camphor(optional)
1 cup ghee  
* Grate the coconuts and extract thick milk.
* After adding water extract the second thinner milk.
* Cook the rice in the thin coconut milk.When three - quarter cooked,add the thick milk and cook till the milk is completely absorbed.
* Add the milk and cook again.When it is absorbed completely add crushed jaggery.
* Cook till well blended.
* Add fried nuts and raisins.Add cardamom powder and camphor.Cool and serve.
