Jackfruit Coconut Pudding
PAZHA PAYASAM
| 1 coconut,scrapped |
2 cardamoms |
| 1 cup sweet jackfruit |
1 tbsp raisins |
| 1/2cup ghee |
1 tbsp cashewnuts |
| Ginger powder |

* Cut the jackfruit into small pieces.
* Extract milk from the coconut.
* Fry the jackfruit in a little ghee till soft.
* Add 1 cup water and cook.
* Add the coconut milk and cook till soft.
* Add jaggery and cook till well blended.
* Add ghee and cook for 5 more minutes.Garnish with raisins
and cashewnuts.
* Add crushed cardamom powder and ginger powder. Serve
hot or cold.
