Amaranth Curry
PAPPU KURA
2 bunches amaranth leaves  
1 tsp urad dal  
a pinch of asafoetida  
1/4 tsp mustard seeds  
oil as needed  
1/4 tsp cumin seeds 
salt to taste  
2 red chillies  
1/4 cup moong dal  
2 green chillies  
2 onions  
1 tsp cocomut scrapings 
  • Clean and pick the amaranth leaves and tender stems.
  • Chop then fine.
  • Cook the leaves with the moong dal till tender.
  • Grind coconut scrapings, cumin seeds and 2 red chillies Add to  vegetable .Add salt to taste.
  • In 4 tbsps oil fry the chopped onions, urad dal, mustard seeds,asafoetida and slit green chillies . Add to the vegetable.
  • Mix well and cook for 2 minutes.serve hot .
