Wheat Pudding
GODUMAI HALWA
| 500 gms whole wheat |
1 tbsp cashewnuts |
| 2 cardamoms |
a pinch of saffron |
| 500 gms sugar |
1tbsp raisins |
| 250 gms ghee |

* Soak the wheat for 72 hours in water .
* Clean and grind the wheat and extract essence through
a sieve.
* Keep grinding and extracting essence till only the
husk is left.down the bottom.
* Leave the essence to settle down.The wheat paste will
settle down at the bottom.
* Make a syrup of the sugar with water to one strring
consistency.
* Remove water from the wheat essence and add only the
wheat paste to the sugar syrup.
* Keep stirring,adding ghee every now and then.
* When the halwa leaves the sides of the pan and the
ghee is finished,sprinkle powdered cardamom,raisins and fried cashewnuts.
* Add the saffron dissolved in a little milk.
* Pour the mixture into a greased plate.When cool,cut
into squares.
