Amaranth Curry
CHEERA THORAN
1 bunch amaranth leaves
1/2 coconut, scraped
1 tsp cumin seeds
3 green chillies, chopped
2 cloves garlic
1 tsp urad dal
oil as needed
salt to taste
Clean, wash and chop the leaves finely.
Grind cumin seeds and garlic finely.
Mix the coconut scrappings, green chillies and the ground paste and grind coarsely.
Heat 3 tbsps oil and fry the urad dal and add the chopped leaves.Cook for a while.
Add salt and the ground mixture. Cover and cook for a few minutes till well blended. Remove and serve hot.
