Stuffed Tomatoes
 
1/2 Kg meat, minced  
6 large tomatoes  
1 chopped onion  
1 tbsp ginger, chopped  
1 tbsp coriander leaves, chopped  
3 green chillies, chopped  
2 tbsps oil  
salt and red chilli powder to taste
1. Wash and fry the tomatoes.  Cut them in equal shape.  Scoop out the inside and place them upside down.
2. Heat 1 tsp of  oil and fry the onion and ginger till pink.
3. Add the green chillies and fry for another 2 minutes. Then add the meat, salt and chilli powder and cook till it is tender and dry.
4. When it is cool, add the coriander leaves and mix well.
5. Stuff this mixtue in the tomatoes.
6. Bake in moderate oven (150 C) for 5-10 minutes. Serve hot.
