Prawn Pulao
SIGIDI PULAO
1 kg prawns
500 gms Basmati rice
500 gms peas
4 onions
3 rd chillies
1/4 tsp turmeric powder
1/2 coconut
1/2 cm stick cinnamon
2 cardamoms
2 cloves
oil as needed
salt to taste
Clean, shell and devein prawns . Apply turmeric and salt and keep aside .
Shell peas.
Grind chillies,cloves, cinnamon and cardamom.
scrape the coconut and extract milk.
Wash and soak the rice for half an hour.
Heat 5 tbsps oil and fry finely chopped onions. When browned, add the prepared prawns and peas. cook covered, on a low fire.
Add the rice and fry . Add coconut milk, ground masala , salt and boiling hot water double the quantity of rice .
Cook till rice is soft and all the water is absorbed . serve hot with pickle.
