Mutton Biriyani With carrots
 
1 tsp garam masala  
2 tbsps oil  
1 tbsp rose water  
2 tbsps cardamaom - cinnamon powder  
3 cloves  
2 bay leaves  
2 tbsps milk  
1/2 tsp saffron
1 kg mutton  
1/2 cup grated carrots  
4 potatoes  
6 onions  
4 tomatoes  
3 tbsps ginger - garlic paste  
1/2 cup curd  
3 cup rice
1. Boil water. Add  the cardamom powder, bay leaves , cloves and salt .
2. Add rice and cook till half done. then drain the water and keep aside.
3. Heat oil and fry the onions and ginger- garlic paste till pink.
4. Then add salt, garam masala chilli powder and chopped
5. Add curd and cook till it gets a gravy - like consistency.
6. Add the mutton pieces and cook till they are tender.
7. Cut the potatoes in to round rings and deep fry them.
8. In a pan pour 2 tbsps of ghee, then spread 3-4 tbsps of rice in this, followded by a layer of mutton and fried potatoes over it. Then make another  layer of rice , and top it up with the remaining mutton and fried potatoes. This should  be followed by another layer of rice (the rice should be the top most  layer ).
9. You can now add saffron dissolved in milk and sprinkle it all over.
10. Add rose water for flavour. cover with a lid and cook till rice is done.
11. While serving .insert the tablespoon from a side of the dish so that all the different layers come out neatly.
Garnish with grated carrot and serve hot .
