Grilled Maxicana
750 gms halibut fish
75 gms butter
2 small onions, chopped
100 gms mushrooms, sliced
2 large tomatoes, chopped
1tbsp tomato puree
3 tbsps dry wine
1 large avacado pear, sliced
8 walnuts, chopped and fried
salt and pepper to taste
1. Mel butter in a pan, fry the onions and mushrooms until soft.
2. Add the tomatoes and mix well.
3. Place fish on the top of the mixture, add salt and pepper.
4. Mix together the tomato puree and wine and pour over teh fish.
5. Grill thoroughtly till the fish flakes.
6. Fry the pear slices lightly and place around the fish. Garnish with walnuts.
